Healthy Dark Chocolate & Peanut Butter Bars

You guys… These dark chocolate & peanut butters are absolutely amazing! They taste like a snickers bar but so much better because they are actually GOOD for you. I have tried a lot of similar recipes in the past but none of them compare to this one. These even got the tick of approval from hubby… and when he loves one of my ‘healthy desserts’, you know it’s good! Hope you love it!

Serves: approx. 12 slices    Prep time: 30 minutes

INGREDIENTS:

BASE:

  • 1 & 1/2 cups rolled oats
  • 1 cup mixed nuts (I like to use almonds & walnuts)
  • 1 cup pitted dates
  • 2 TBS melted coconut oil
  • 1/4 cup shredded coconut

FILLING:

  • 2 cups pitted dates
  • 1/2 cup natural peanut butter
  • 2 TBS melted coconut oil
  • 1 TBS almond milk
  • 1 TBS cocoa or cacao
  • Pinch of Pink Himalayan salt

CHOCOLATE TOPPING:

  • 100g Dark chocolate (70%-90% Cocoa content – I use 70%)
  • 1 TBS coconut oil

DIRECTIONS:

For Base: 

  • Preheat oven to 180 celcius and line a baking tray with baking paper
  • Spread rolled oats and mixed nuts onto baking tray and roast for 10 – 15 minutes until golden
  • In a food processor, combine oats & nuts mixture with all other base ingredients until a dough forms
  • Press the dough into a baking tin lined with baking paper so that it is spread firmly and evenly

For Filling: 

  • In a food processor, blend all filling ingredients until smooth and sticky
  • Press mixture firmly and evenly onto base

For Chocolate topping: 

  • Heat chocolate and coconut oil on a low temperature until melted
  • Drizzle chocolate over the bars
  • Place into freezer for 2 hours until hardened
  • Remove from freezer, and cut up into bars!
