Healthy loaded sweet potato fries

One of my favourite foods in the entire world is Mexican.. In particular Nachos. I could seriously eat it all day, every day. But where there’s a will, there’s a way! And I was determined to find a healthy alternative to those chemical loaded nachos without compromising on flavour! My favourite way to serve ‘healthy nachos’ is with sweet potato fries. This recipe is my quick and easy go-to, but if you’re feeling a little crazy, feel free to add in some of those healthy mexican ingredients like black beans, corn, red peppers and jalapenos. I top the fries with a ton of guac, parmesan, greek yogurt and a dash of hot sauce and they are ahhh-mazingggg!


Serves: 4 (as a side)    Prep time: 40 minutes


For Fries:

  • 3 medium sized sweet potatoes peeled and cut to 1/4 inch thin (the fries are better to be thin than thick)
  • 2 TBSP extra virgin olive oil
  • 1 TSP paprika
  • 1 TSP garlic powder
  • 1 TSP chilli or cayenne pepper (optional)
  • Himalayan salt & pepper

For Guacamole: 

  • 2 Avocados
  • 1 red onion
  • 1 tomato
  • 1/2 of a lemon
  • Himalayan salt & pepper

For Toppings:

  • Parmesan Cheese to sprinkle
  • Dollop of Greek Yogurt
  • Hot sauce (optional)


  • Preheat oven to 205 celsius (400 fahrenheit)  and line baking tray with baking paper (you may need a second baking tray depending on size)
  • Place cut sweet potato fries in a large bowl and combine well with all fries ingredients
  • Spread out fries on baking sheet in a single layer. DO NOT crowd the tray, use two trays if necessary (they will be much crispier this way)
  • Bake fries for 15 minutes and then flip and bake other side for 10-15 minutes until golden. Make sure to keep fries in the oven once they are baked for at least 10 minutes to ensure that they get as crispy as possible
  • Meanwhile, combine guacamole ingredients and mash with fork until combined
  • Top fries with guac and desired toppings and enjoy your healthy loaded fries!
